The three cuts are the Rated Cut, Sever Cut and Quality Cut.  The Rated Cut determines the thickest metal sheet the plasma cutter can cut through at a rate of 10 inches per minute.  The Quality Cut determines the thickest material that the plasma cutter is able to cut through while still producing a clean, quality cut.  The Sever Cut determines the absolute maximum thickness the plasma cutter model is able to cut through.  The sever cut will require that you remove slag because the cut will not be quality.
